Fettucini Alfredo with Chicken - Italian food recipe

For sauce:
2 tablespoons extra virgin olive oil (EVOO)
1 cloves garlic minced
1 medium minced shallot
1/4 pound butter
1/2 cup parmesan cheese
3/4 cup mozzarella cheese
white pepper
Pint heavy whipping cream

Melt butter in olive oil, add shallot and garlic. Add parmesan cheese and whipping cream. Simmer for 10 minutes stirring often. Add 3/4 cup mozzarella, stir for 5 min, then add a bit of cold water with corn starch to thicken.

Batter:
1/2 cup Panko bread crumbs, 1/2 cup regular, 1 teaspoon each white pepper and kosher salt
Slice 1 chicken breast lengthwise, batter and fry until golden brown

Serve over fettucini noodles, add sauce, sliced chicken, Italian herbs and fresh grated parmesan cheese.

sandrodream: no in italy we have other types of Fettuccine. and maded with fresh ingredients...and very region has own dishes typical that are knowed only here...for example you know Risotto alla crema di scampi ?
