Let's Get Cookin'!: Santa Fe Chicken Video
This dish was DELICIOUS!!! Next time I am going to play with the "heat" by using hot or even medium salsa. Possibly black beans as well as the pintos.
Sorry, reloaded because the sound was totally off. I redid it and I think it sounds better.
Ingredients
* 1 large onion, chopped
* 1 tablespoon butter
* 1-1/4 cups chicken broth
* 1 cup salsa
* 1 cup uncooked long grain rice
* 1/8 teaspoon garlic powder
* 4 boneless skinless chicken breast halves (4 ounces each)
* 3/4 cup shredded cheddar cheese
* Chopped fresh cilantro, optional
Directions
* In a large skillet, saute onion in butter until tender. Add broth and salsa; bring to a boil. stir in rice and garlic powder. Place chicken over rice; cover and simmer for 10 minutes.
* Turn chicken; cook 10-15 minutes longer or until a meat thermometer reaches 170 degrees. Remove from the heat. Sprinkle with cheese; cover and let stand for 5 minutes. Garnish with cilantro if desired. Yield: 4 servings.
Nutrition Facts: 1 serving (1 each) equals 339 calories, 10 g fat (7 g saturated fat), 46 mg cholesterol, 744 mg sodium, 43 g carbohydrate, 3 g fiber, 15 g protein.

silverscreamgrl: I'd just finished feeding them :) I get about 100-200 birds in the mornings, so it does get to be a bit, but after a while you forget they are even there...become white noise of sorts
anmoose: So you're suggesting that there's a Santa Fe in Hawaii? That's a simple recipe, but made of yum. It's hard to go wrong (unless you burn the rice... LOL). I DO like your idea of adding beans, though I think I'd add them early so they could soak up all the goodies. Odd koinkidink, I was doing a rice dish yesterday, with brown rice (what I normally use), and it got a little "extra brown." And I NEVER burn rice. *grumblegrumble* It must be something that's going around... :-P

papercuts777: Good call with the beans. I will definitely replicate! Was taking note of the absence of one of the stoves 'rings' and 'crumb catcher deal'.Mine was the opposite with a blown out and MISSING element coil for a few episodes. haha

silverscreamgrl: Make sure you use the long grain rice. I found the medium sopped up a lot of the water and was just mush by the time I ate the last of this dish... I made it for my lunches this week. So by today it was like...bleh lol. DELICIOUS thought the very first night. Next time I do it, hotter salsa and long grain rice fro sho

capergirl1976: LOL its all good considering how delicious it is it bears repeating in my opinion. The nacho chicken and crunchy/munchy chicken are always to a go to alot and have gotten the thumbs up when serving : )
