Cleaning Chanterells June 2009

in the Cairngorms National Park or try and find my secret fungi map.!!! Chanterelles are at their best when drizzled with a sauce made from the reduced cooking liquids with wine added, lots of garlic..ie "frenchie" style.....but they also go great with stronger asian spices such as ginger, chillies etc....try them in a pork stir fry with lost of ginger and caramel soya. ...
