
This is my take on a French classic, ratatouille. I learned how to make this dish from one of my mils many years ago. It can be served as a stand alone side dish, a main course, and can be served over rice or pasta, which I do often. Thanks for watching. This dish can be made out of almost any vegetable, since it's really just stewed vegetables. The vegetables I use change according to what I have on hand. This time I had a big bag of mixed vegetables so that's what I used. I just layer the vegetables and add in some bred crumbs and cheese. This time I had some tomatoes that needed using so I added them. You really can't go wrong with this dish; almost any combination will work and I've used lots of different vegetables over the years and it's always good.
