I wish that more people of African descent would attend Afro-centric concerts or events such as the Black Media Congress and the May Ayim Award. I attended both events. Breads around the world - Injera - Ethiopia
Luke, Matthew and John-Paul are doing a Breads around the world project for their Geography lesson. This is the sixth installment and it looks at Injera, a flatbread from Ethiopia. Injera is the "tablecloth that you eat" on which a wot or stew is placed and picked up using the bread. This version is not authentic as we don't use teff flour for the Injera.

Ethiopian Style Pea Flour Sauce (Shiro Wot)
An easy and traditional sauce, Shiro Wot is delicious and nutritious with an intoxicating aroma. This dish is usually a staple in traditional Ethiopian tables, where a myriad of different dishes and sauces are served over a large spongy bread made of Teff, a very nutritious grain, called Injera. If Shiro (pea flour) is not readily found in your area, I have posted a recipe on joelluks.com.
